Buying guide

Fontana Forni is an Italian family company that has been making ovens since the 1970s, and its steel outdoor pizza ovens come in a wide range of sizes, fuels and finishes. This page covers the company, the ovens we sell and how to choose between them.

About Fontana Forni

Fontana is based in San Lorenzo in Campo in the Marche region of Italy. The company traces its roots to 1946, when Giuseppe Fontana repaired agricultural machinery and worked as a farrier; the Fontana brand followed in 1954 and the Fontana Forni name in 1975, when, Fontana says, the family began making the first metal indirect-combustion oven in the world. It is still run by the Fontana family, from two production units, and describes its ovens as 100% made in Italy, sold through around 1,200 dealers in 40 countries.

How they are built

The Margherita, Mangiafuoco and Marinara have a stainless steel inner structure, an outer shell of galvanised steel with Qualicoat powder coating (or stainless steel on stainless versions), a refractory chamotte cooking floor and ceramic-fibre insulation. The wood-fired versions are rated at 9kW, and each has a 150mm top flue with a chimney cap. The Maestro 60 has a stainless steel flame deflector and a ceramic-fibre insulated vault. Finishes include anthracite, red (rosso) and stainless steel; each listing shows what is available.

How to choose a Fontana

  • Size. Two pizzas at once for a family (Margherita or Maestro 60), four for regular entertaining (Mangiafuoco), five for big parties (Marinara).
  • Fuel. Wood for flavour and stored heat; dual fuel for gas on weeknights and wood at weekends; gas only for simplicity. Fontana says gas and wood must never be used at the same time in a hybrid.
  • Trolley or countertop. A trolley stands alone; a countertop oven sits on a non-combustible worktop or base in an outdoor kitchen.

Fontana covers and tools

Fontana makes tailored covers for each oven, in separate trolley and countertop versions, in heavy-duty PVC with a black polyester outer layer, a water-repellent treatment and integrated straps. Tools include the 120cm aluminium pro pizza shovel, the 120cm oven brush and a grill and drip tray set for grilling in the oven. See pizza oven covers.

Where to put a Fontana

Fontana ovens are heavy, from 58kg for the Maestro 60 to 150kg for the Marinara oven body, so they need a stable, level, non-combustible worktop, stand or base, or their trolley on firm ground. Keep the flue clear above, away from branches and solid roofs, and keep LPG cylinders for gas and dual fuel ovens outdoors, upright and away from the heat.
